2010 Le Pelut – Tohu Bohu
What: Tohu Bohu comes from a single parcel of Merlot under Pierre's cultivation since 2005. The parcel is situated in the town of Villarzel du Razés on the foothills of the Pyrenees in southern France. The parcel is one of the highest in the Malepère and faces south on a clay and limestone hillside. Tohu Bohu is macerated in whole bunches with stalks for up to 8 days, quite short given the resulting flavors in the wine.
Tasting Notes: This delicious Merlot stands apart from any Merlot we have tried, natural or conventional. It's natural vinification lends this Merlot complexity, density and spice, yet the wine is very drinkable. Aromas of raspberry and prune combine with a tannic juiciness in the mouth. This is a wine for meals and pleasure, best paired with homemade pizza, chicken terrine, or grilled lambchops with thyme.

Tohu Bohu comes from a single plot, which is situated on the foothills of the Pyrenees. Pierre Rousse has been growing Merlot here exclusively since 2005. The Tohu Bohu is complex, dense and spicy. Plenty of raspberry, plum and lots of juice on the palate.
